Abstract

The aim of the current study was to evaluate the microbial contamination of butter oil collected from different nomadic areas of Kermanshah province. 210 samples of fresh butter oil (500-600 g) prepared from sheep and goat milks were collected from 7 nomadic regions of Kermanshah province in the late spring and early summer of 2019. The mean total viable count, psychrotrophic bacterial count, coliforms, Escherichia coli, Staphylococcus aureus, and mold/yeast in oil samples were 2.91, 3.39, 2.46, < 1, 2.44, and 2.46 log CFU/g, respectively. The results of this study showed that 10.47% and 7.61% of the butter oil samples were contaminated with S. aureus and coliforms, respectively. None of the oil samples were contaminated with E. coli. The results of the present study indicate the appropriate microbial quality property of the collected butter oil samples from different parts of Kermanshah province within the national standard range of butter and butter oil.
